I’m not going to post stats because I’m in a big hurry. I’m trying to go on vacation tomorrow, and a bunch of stuff has fallen into my lap (not literally, lol) at work. Stats haven’t changed from last week anyway.
I went to the doctor yesterday to get my prescription for my insulin so I won’t run out on vacation. My doc is out “indefinitely” because he hurt his foot, so I saw a nurse/practitioner. She was so pretty I wanted to smack her. LOL. Seriously, she was very nice. She looked at my last A1C test and decided she wanted to do another one. It’s not high like when I first found out I had diabetes (it was over 13), but it was still 7.2 and she wants it to be under 6.5. So if this test still shows it’s high, I have to up my dosage of Metformin, which is the medicine I take in addition to insulin. It helps the insulin work better. I don’t know if she will up the dosage of the actually pill, or if I will have to take 3 instead of 2 a day. Grrr. Anyway, since my husband’s illness, I’ve been under all kinds of stress…emotional, physical, financial…and I just haven’t been as careful with my eating and exercise. So my weight loss has been at a standstill. I really need to cut down on fats. That’s my main problem. I just like so many fatty foods. I don’t like veggies much at all, and I don’t like too many fruits. I may just have to start choking some things down whether I want to or not. Bleh. Or at least make a list of veggies I DO like and concentrate on figuring out different ways to eat them. Okay let’s see, onions, cucumbers, lettuce…that’s mostly it. I like squash, zucchini, and okra…but fried. *shakes head in exasperation*. I DO like beans (legumes, not green), so I need to substitute those for meat sometimes. I need help here! Does anyone have any good recipes involving onions, cucumbers, or beans???
At least while I’m in Florida, I’ll be eating seafood instead of beef. I LOVE crab! My friend whose family is going with us owes me a couple of dinners because I sold her my cat cage, so it’s going to be crab legs, baby! LOL
I need to whip up some recipes for you! I’ll work on that. Looks like you are coming just after our week of storms. It’s gorgeous out today – enjoy your vacation!
I would love some recipes or serving suggestions. My husband checked, and it looks like the gulf is going to be mostly rain free while we’re there. Of course a rain can always come up unexpectedly down there. 🙂
We were supposed to have had storms earlier in the week, but they passed us by, which happens a lot.
Do you like garlic? I love to shave the squash (I use a carrot peeler) and eat it tossed with olive oil, thinly sliced onion and garlic. If raw is too much for you, that same blend sauteed is super yummy. You can do zucchini the same way.
I’ll dig through the brain this weekend and come up with more.
I LOVE garlic! 🙂 I could probably eat that raw with no problem. In fact, if it’s not fried, I would probably RATHER have the squash raw. Do you eat the peel, too?
There is a recipe I got from a friend that’s popular in Indiana where they toss cucumbers, onions, vinegar,and sugar together and let it marinade. I could use Splenda, I bet.
I had an onion-cucumber-bean combo earlies this week in a Mediterranean salad I made. In additon to those ingredients, I mixed in lettuce, Kalamata olives, feta cheese and a dressing made with olive oil and balsamic vinegar. A little dried or fresh basil and/or oregano goes well with this too. Tomatoes would be another optional ingredient. (You can really use any kind of beans, but my favorite in this dish would be a white navy, cannellini, or kidney bean.)
Have you ever tried making a “green smoothie”? It’s a great way to hide some greens in a yummy drink. My favorite combo is (banana or mango) + spinach. It comes out a beautiful green color, but you can’t taste the spinach–really!
Keep experimenting with finding ways to get those veggies in you and don’t give up 🙂
That salad sounds really good. I do like salads, but they get boring if you’re not creative. Oh, and I don’t like tomatoes…. I’m crazy about olives, though.
Okay, you’re not going to believe this, but I don’t like bananas and mangoes. I know, crazy, huh? There used to be a great smoothie they had at a local place that went out of business. It had raspberries, strawberries, and oranges in it. You know what my biggest problem with fruit is? Usually the texture! I love the taste of strawberries (the sweet ones, not the tart ones), but don’t like the texture. I guess apples are my favorite fruit. I love the taste of oranges, but I don’t like that skin that’s around the pulp. That’s why I like canned mandarin oranges, because they don’t have that. Do fresh mandarin oranges have that skin? I almost bought some, but I wasn’t sure.
I’m so sorry things have been so stressful for you. You’re on my mind a lot and always in my prayers.
I know what you mean about difficulty fitting in veggies. I honestly didn’t like many vegetables until I started forcing myself to eat them. The hardest one for me was carrots. I’ve always hated them, especially raw. I could handle cooked baby carrots, but that was about it and even those I usually had to choke down. Well, really, I didn’t like any vegetables raw. Raw veggies can help with your immune system, though, and I’ve found that when I do make myself eat raw veggies, I usually feel lighter and more energetic and less tempted by processed foods.
Anyway, the way I started enjoying raw vegetables was through Hummus. Of course that doesn’t help if you don’t like Hummus…

I actually do like hummus fairly well. I usually prefer my veggies raw, but I’m like you, I don’t like raw carrots. Besides, they hurt my teeth to eat them. LOL. If I can spice the veggies up and the texture doesn’t make me gag, I might be okay. Seriously, if I don’t like a food, I usually gag and almost throw up. 🙂

Make homemade soup, the easy way to get your veggies intake. Chop it all up, blend, add water, pepper, spices – whatever will make it tastier, and it’s the healthiest thing you can eat.
Okay, all my replies are so embarrassing because I don’t like anything. I don’t like soup. Except potato and French onion. See how hopeless I am? 🙂

As for recipes, the one I like that adds a lot of veggies together and is easy to make is the corn salad. You take frozen corn and boil it so it’s ready. Then you cut up any vegetable you want (cucumbers, tomatoes, celery, carrots, onions, whatever you like). Then you mix it up with italian salad dressing (or a similar mix) and add salt and pepper if you want.
Well, she was as nice as she was pretty, so I had to give her a pass. LOL
I gained a little on vacation, but not much. I’ll get that off this week, I hope.
I think making veggies appealing has a lot to do with spices and sauces. And getting the texture right. Thanks for the tip!
